Fancy something a little bit delicious…?

It’s Tuesday and that means it’s time for some brand new, original content from Mr Baker’s Cakes: The Blog!

This week, it’s another delicious recipe and I’ve been playing with some of the gorgeous flavoured icing sugars from Sugar and Crumbs.

I love pairing the flavours of lemons and blueberries, but with lemon having such a strong flavour profile, it can be tricky to get the balance just right. So when I saw that Sugar and Crumbs had done the hard work for us with their Blueberry and Lemon Icing Sugar, I had to order some and have a play!

I used the flavoured icing sugar in both the sponge (yes, you can do that too!) and in the buttercream, before filling my cupcakes with wild blueberry conserve and topping them with crumbled French Meringue.

It’s Tuesday – time for a new recipe…!

Hey cake chums!

As promised, August has seen a return to my regular posting schedule and this means that you can expect some new and original content from Mr Baker’s Cakes: The Blog every single Tuesday. The first Tuesday of the month means it is time for a brand new recipe – and this is one that has been kicking around the Mr Baker’s Cakes kitchen for a while now.

Today, we are taking our inspiration from my baking muse – the original Mrs Baker – my grandmother Joan – not one of her recipes, but rather memories of the treats she would also have on hand during the lengthy car journeys of my childhood.

Like all good grandmothers, mine never failed to have a tasty treat on hand (usually something homemade actually) and car journeys were no different. You could always guarantee that at some point the centre console would be opened and out would come some form of traditional sweet (or candy for my American friends). Ever since then, certain sweets have retained the magical ability to take me straight back to my youth and today’s inspiration is no exception.

Inspired by one of my grandmother’s favourite ‘long drive treats’ – traditional Chocolate Limes – my Chocolate Lime Cupcakes marry the zingy flavours of fresh lime and rich, dark chocolate creating a combination that is both refreshing and decadent – I don’t know about you, but I always think that chocolate always benefits from a sharp citrus flavour.

And now for something a little bit different…

Recently, I made a wedding cake for my sister-in-law, Hayley and her new husband, as they celebrated their wedding day at the stunning Three Choirs Vineyard in Wickham, Hampshire.

Hayley was keen to keep things simple, with a fresh, buttercream-finished design and the only decorations were some fresh blooms and foliage from Peony Blue Floral Design.

As someone who has to deal with a number of severe dietary allergies, including gluten and dairy, Hayley had to be very careful to avoid any of her allergens during the wedding and I must give huge props to the venue for catering for her needs perfectly – and even better, the rest of us barely noticed the difference.

Similarly, the cake had to be equally allergen-free, so I was faced with the prospect of creating a gluten- and dairy-free cake – with a buttercream finish, no less – that needed to stand up to being stacked and sat out for the majority of the day.

Now, a disclaimer: I am not a specialist allergen-free baker by any means and I don’t think I have ever posted a gluten- or dairy-free cake recipe here before. However, after the wedding cake was posted online, I received a few requests asking me to share the recipe that I used, so I thought I would do that in the hope that it gives others, who find themselves in my position, a bit more confidence when tackling a gluten- and dairy-free celebration cake.
